Abstract: Near infrared spectroscopy,a non-destructive detection technology based on molecular vibrational energytransitions,ofersadvantages suchasreagent-free operation,non-invasiveanalysis,rapid proessing,andcost effectiveness Its application in food safety testing enables swift assessment of food composition,physicochemical properties,and potential hazards,demonstrating broad prospects acrossmultiple stages including raw material screening,production process control,and final product quality inspection.This paper systematicallyoutlines the fundamental principles and technical characteristicsof near infrared spectroscopy,while analyzing its current implementation status in food safety monitoring through key application areas.The study aims to advance the application of near infrared spectroscopy technology in food safetydetection systems.The industrial application of the domain provides acertain theoretical referenceand practical basis,gives fullplayto its technical advantages,and provides a corresponding foundation for food safety supervision.
