Abstract: During the cold chain transportation of meat products, microbial contamination problems occur frequently due to the influence of various factors.To enhance the safety level of cold chain transportation of meat productsand ensure their quality,this paper analyzes the main causes of microbial contamination during cold chain transportation of meat products and proposes targeted comprehensive prevention and control strategies.
