Abstract: Excessive presence of aluminum in foodcan pose a potential threat to human health, especially in the accumulation efect in the body and sensitive exposure of special groups of people.This paper analyzes the health risks of aluminum accumulation in thebody, the risk offood chain pollution and the sensitive risk ofspecial groups, explores the risk transmission mechanisms of aluminum such as food processing introduction, matrix migration and transformation,and dietary intake exposure,and puts forward multi-dimensional prevention and control strategies such as source control, processing control and ful-chain supervision.It aims to provide theoretical support and practical reference for reducing the aluminum content of food and ensuring food safety.
