2022年淮安市某中学可疑食源性疾病调查结果分析

Abstract: Objective:To explore the epidemiological characteristics of suspected foodborne diseases in a middle school in Huaian city in 2O22,and provide astrong basis forthe prevention and control of suspected foodborme diseases in the later period.Method:Epidemiological and hygienic investigations were conducted to identify the onset of the disease and suspicious foods;samples such as food retention,kitchenware smears,vomitus and anal swabs were collcted for aetiological analysis to determine the pathogenic bacteria and analyze the causes of the occurrence. Result: The main symptoms and signs of 29 students were nausea ( 100% 29/29) and vomiting (82.76% 24/29).Blood routine examination indicated bacterial infection. After symptomatic treatment,they recovered well and the disease course was relatively short. A total of 74 samples were collcted,among which 3 tested positive for Staphylococcus aureus.They were respectively from the patient's vomit,the anal swab of the cafeteria staff,and the suspicious food,hand-grabbed pancakes.Laboratory tests confirmed thattwo positive strains of Staphylococcus aureus were homologous.The incident occurred after the cafeteria staff were infected with Staphylococcus aureus and contaminated the food during the processng of hand-held pancakes.Conclusion: This incident was a foodborne disease caused by the contamination of food in the school cafeteria by Staphylococcus aureus. It is suggested to enhancethe food hygiene and safety awarenessofcafeteria staffto prevent the occurence of such foodborne diseases.
