Abstract: Organophosphorus Pesticides (OPs) pose a serious threat to food safety, and there is an urgent need to develop rapid and eficient detection technologies.Fluorescence sensing technology has the advantages of rapid response and easy visualization. Metal-Organic Frameworks (MOFs) materials,with their tunable structural propertiesand excellent luminescence performance,provide an ideal platform for constructing efficient fluorescence probes.This review systematically summarizes the mechanism of action of MOFs-based fluorescent probes in the detection of OPs residues in food,clasifies and reviews the research progress by common metal categories,and finally discusses the current challenges and future development directions in this field,aiming to provide ideas and references for the research and development of rapid detection technologies for OPs residues in food.
