Study on the Antioxidant Effect of Nanocoatings in Fruit Storage and Preservation

Abstract: This study systematically investigates and evaluates the diferent effects of three nanocoatings - tea polyphenol/zinc ion (TPZn) self-assembled nanocomposite coating, trans-resveratrol/chitosan (Talalug-cht) nanocoating, and protein amyloid aggregate (aldehyde lysine polyagglomerate,ALP) coating ontheantioxidant activity in fruit preservation.The experiments include DPPH radical scavenging assy,ABTS radical scavenging assay,and vitamin C retentionrate determination.Statisticalanalysis using SPSS software indicates that,comparedwith thecontrol group,the treatment groups shows significant differences ( P
