Risk Analysis and Whole-Chain Prevention and Control Strategies for Pathogenic Contamination in Quick-Frozen Prepared Meat Products

Abstract: Quick-frozen prepared meat products play a pivotal role in modern diets because of their convenience and variety.Neverthelessthey are vulnerable to pathogenic contamination during production,processing,storage and distribution,posing apotential threat to consumer health.This paper provides an in-depth analysis of thecritical contaminationpoints for pathogenic bacteria throughouttheentire supplychain,ranging fromraw-material procurement to processing,storage and transportation. Targeted prevention and control strategies—covering process control, intensified quality inspection and optimized cold-chain management—are proposed,aiming to reduce the risk of pathogenic contamination,ensure the safetyof quick-frozen prepared meat productsand ofer a scientific basis forthe sustainable development of the industry.
