Abstract:Thecontaminationof trace harmful chemicals infood matrices poses aserious threat to public health and food safety.Physicaland chemical testingtechnignes,ascore testing techniques,directlydetermine theefectiveness of supervisionbased on itsperformance.Thisarticle reviews the research progress of mainstream and emerging testing technologies suchasspectroscopyandchromatography,analyzes the technical principles,advantagesand disadvantages, andapplicationscenarios,exploresoptimizationdirectionsbasedonthecomplexityoffood matrices,andlooksforwardto future development trends,with the aim to provide reference for the field offood safety testing.
