Innovative Applications of Modern Food Analysis Technologies in Quality Control

Abstract:This paper systematically reviews theapplications of modern fod analysis technologies in food quality control.Itoutlines the characteristics and clasifications of techniques including molecularspectroscopyand optical imaging,chromatograph-massspectrometrichyphenatedanalysis,iosensingandimmunoassayswellasinforation based and intelligentdata analysis.In line with thequality management requirements ofrawmaterial inspection, process monitoringand finished product evaluation,the paper depicts inovative uses including spectral imaging for spatialcharacterizationofproductquality,non-targetedchromatographic-masspectrometricfingerprintingforquality consistencycontrol,biosensor networks forreal-time monitoring,and multi-source analytical datacombined with machine learning for supporting release decisions,aiming at providing technical reference for building arefined and traceable food quality control system.

食品分析主要依据物理、化学、生物化学基本理论,运用各种科学技术,按照制定的技术标准,检验原料、辅助材料、半成品及成品质量,以保证产品优良,同时帮助生产部门开发新的食品资源、试制新的优质产品、改革生产工艺、改进产品包装和贮运技术,可以说是一门研究和评定食品品质及其变化的学科。(剩余5340字)
