Abstract：Curently，China'sfoodsafetyintheflour-basedfoodsectorfacesseverechallenges，withthecovertddition of non-ediblesubstances becomingaregulatorypain point.Someunscrupulous operators illgallyadd borax to improve foodtextureand extend shelflife，posing potential threats to public health.Addressing thedisconnectbetweenrapid on-site screeningand laboratory-based precise quantification in existing detection methods，this paper systematically reviewsthephysicochemical propertiesand toxicological mechanisms ofborax.Itconductsan in-depthanalysis of the advantagesanddisadvantagesofvarious technical approaches，including sensory identification，chemicalrapid testing， and instrumental confirmation.The paper explores a comprehensive detection system fromqualitative screening to quantitativeanalysis，with particularattention tothe interference ofraw material background valueson testresults.The researchaims toestablishascientificand eficientdetection framework，provide technicalreferenceformarketregulatory authorities to more precisely combat illegal additionand effectivelysafeguard consumers'food safety.
