Research on the Application of Molecular Biology Techniques in Food Microbiological Detection

Abstract: Due to problems such as poor timelinessand insuffcient sensitivity,traditional microbial detection methods are diffcult to met the analytical requirements ofcomplex food matrices. Molecular biotechnology has been widely applied inthe fieldoffood microbiological detection due toits advantages suchas rapidity,sensitivity,high eficiency and strong specificity. This paper systematically reviews the application of molecular biology techniques such as Polymerase Chain Reaction (PCR),real-time fluorescent quantitative PCR,isothermal amplification,gene chips and high-throughput sequencing in the detection of food microorganisms,and discusses the challnges and future development trends faced bythese techniques in practical applications,toprovide atheoretical basis forfurther promoting the application of molecular biology techniques and improving the level of food microbiological detection.
