Abstract: Food-derived polysaccharides,as natural biological macromolecular compounds, exhibit unique functionalcharacteristicsand broadapplication prospects in thefieldoffood processng.This paperanalyzes thecore role of food-derived polysaccharides in scenarios such as food packaging and preservation,improving fod texture and taste,and enhancing food nutritional value. It also proposes strategies such as optimizing extraction processes, strengthening quality control,and promoting product innovation and research and development in response to the technical botlenecks existing incurrent applications,withtheaimofproviding theoreticalreferences forthe efficient development and industrial application of food-derived polysaccharides.
