Research on the Analysis of Nutritional Components in Food Based on UHPLC-Q-TOFMS

Abstract: In order to achieve efcient identification and content difference analysis of a variety of typical nutrients in complex foods,and improve the accuracy and throughput efficiency of nutrient detection.In this paper, Ultra High Performance Liquid Chromatography-Quadrupole-Time of Flight MassSpectrometry (UHPLC-Q-TOFMS) was used to determine representative nutrients such as vitamin C,phenylalanine,quercetin and other representative nutrients in food,and were applied in six types of food samples.The results showed that there were significant differences in the content distribution ofthe three types of target ingredients among different types offood.Principal component analysis and clusteranalysis revealed the nutritional structurecharacteristics offood categories: fruit and vegetable samples were rich in vitamin Cand quercetin,showing typical antioxidant advantages;cereals and nuts were mainly composed of phenylalanine,reflecting the accumulation characteristics of plant protein metabolites. Dairy products and meat products were clustered into independent branches due to the lack of polyphenols detected, andthe nutritional composition was relatively single.This studycan provide effective data support for food nutrition evaluation, label construction and functional ingredient screening.
