Progress in the Application of Atomic Absorption Spectroscopy in the Detection of Heavy Metals in Food

Abstract: With the rapid development of industrialization and agricultural modernization,the problem of heavy metal pollution in food has become increasingly prominent. In this paper,the basic principles,advantages and disadvantagesof atomic absorption spectrometryare systematicallysummarized,and the technical characteristics, scope of application,advantages and disadvantages of flame atomic absorption spectrometry, graphite furmace atomic absorption spectrometry,cold vapor atomic absorption spectrometry and hydride generation atomic absorption spectrometry are analyzed. Combined with specific application cases,the efect of the above method in the detection ofheavy metals such as lead,cadmium,mercuryandarsenic indiffrent food matrices suchas grain,meat,vegetables and aquatic products isdiscussed.In viewof the shortcomings of the current technology,optimization strategies such as intellgent equipment development, multi-technology coupling,and green pretreatment are proposed, which provide a theoretical reference for improving the efficiency and accuracy of food heavy metal detection.
