Abstract: Objective: To establish a method for the determination of aluminum residue in vermiceli by inductively coupled plasma mass spectrometry and to conduct health hazard assssment. Method: A pretreatment method for microwave digestion of vermiceli was established, and the detection method of aluminum by inductively coupled plasma mass spectrometry was optimized. The health hazard degree of aluminum residue in vermicelli to different populations was evaluated according to the health hazard index model.Result: In the mass concentration of 0~10.0μg⋅mL-1 , the standard curve for the determination of aluminum residue had a good linear relationship, R2=0.9999 ,and the six spiked recoveries of aluminum were 95.4%~100.05% ,with a relative standard deviation of 2.09% . The detection limit of this method was 0.5mg⋅kg-1 ,and the quantification limit was 2.0mg.kg-1 . 177 vermicelli samples were tested, and the aluminum residue was 74.35mg⋅kg-1 ,with a median value of 56.33mg⋅kg-1 .The health hazard assessment showed that aluminum ingested from vermiceli would not cause health hazards to the human body. Conclusion:This method is simpleand convenient tooperate, with high sensitivity, good accuracyand stability, and is suitable for the analysis and detection of aluminum residues in vermiceli noodles and quality safety assessmnt.
