Problems and Improvement Strategies for Quality and Safety Control in Livestock Product Slaughtering and Processing

Abstract: With the continuous enhancement of consumers’ awareness of food safety, the quality and safety controlof livestock products slaughtering and processing has become an important line of defense to protect public health.This paper deeply analyzes the key problems such as the lax control of pre-slaughter quarantine inspection, the weak environmentalsanitationand crosscontamination prevention and control of workshops,and systematically puts forward the improvement countermeasures such as strengthening the construction of quarantine personnel and improving the workshop hygiene management system,aiming to build a scientific and efective quality and safety control system for slaughtering and processing of livestock products.
