Application of LC-MS in Food Safety Detection

Abstract: Liquid Chromatography-Mass Spectrometry (LC-MS) isananalytical technique that combines the effcient separation capabilityof liquid chromatography with the highlysensitive detection capabilityof tandem mass spectrometry.This paper systematically expounds the basic principle,system composition and analysis process of LC-MS,with a focus on its application inthe detection of pesticide residues,veterinary drug residues,mycotoxins, foodadditivesand illgal foodaditives.Through comprehensive analysis oftypical applicationcases ofLC-MS,it is foundthat it has technicaladvantages such as wide application range,high detection sensitivity,accurate qualitative and quantitative analysis,and strong anti-matrix interferenceability in food safetydetection.Inaddition,thefuture development direction of LC-MS is explored in combination with its current application status,aiming to lower the application thresholdand increase its popularity inthefield offoodsafetydetection,andconstructe amorecomplete food safety technical guarantee system.
