Research on the Sources ofMicrobial Contamination Risks and Control Countermeasures in the Production Process of Prepackaged Meals

Abstract: This paper analyzes the sources of microbial contamination risks in the production process of prepackaged meals from aspects such as raw materials,equipment, personnel, environment, and packaging,and puts forward a series of precise prevention and control strategies such as strengthening raw material management, standardizing equipment maintenance,optimizing personnel operation, controling the production environment and improvng packaging technology,aiming to build a complete risk preventionand control system,ensure the food safety of prepackaged meal, and promote the healthy development of the prepackaged meal industry.
