Key Technologies for the Prevention and Control of Salmonella Contamination in Meat Products

Abstract: Salmonella is the main pathogen causing foodborne diseases,and the pollution in meat products is seriously threatening the health of consumers.This paper summarizes the key prevention and control technologies of Salmonella contamination inthebreeding,slaughtering and processing,retail and consumption links,and analyze the drug resistance chalenges and the development trend of new prevention and control technologies,aiming to reduce the risk of Salmonella contamination and provide a scientific basis for the safe production of meat.
