Abstract: The moisture content of organic food raw materials directly affects their quality,storage,and procesing performance.With the continuous development of moisture detection technologies,chemical methods,physical methods,and physical-chemical combined methods arebeing increasingly appliedin diferent moisture contentranges. According to thedetection principles,this paperclassifies detection technologies into chemical methods,physical methods,and physical-chemical combined methods.Itsystematicallysummarizestheadvantages,disadvantagesof these technologies and their applicabilityin organic foodraw materials with different moisturecontents.Finally,it makes a prospect for the development trends of future moisture detection technologies for organic food.
