The Application of Immunoassay Techniques in Food Risk Monitoring

Abstract: In recent years,food safety incidents have occurred frequently, posing a threat to consumer health. Therefore,it is necessary to detect and monitor hazardous substances in food.Immunoassay technology is based on the principle of specific binding between antigens and antibodies,and can achieve qualitative or quantitative analysis of target substances. Based on this,this article systematically introduces the basic principles ofimmunoassay technology and its application in monitoring risk substances such as foodborne pathogens,pesticide residues, veterinary drug residues,biotoxins,heavymetals,and food additives.
