Technological Innovation and Future Development of Nutritious and Healthy Food for Grains and Oils Based on the Concept of Dietary Health

Abstract: In recent years,the global incidence of chronic diseases has soared,and the public's dietary structure hasbeeunbalanced.As the basic dietarycarrier,promoting the nutritional and healthydevelopment of grain,oil and food products is conducive to driving the progress of the food industry.Based on the problems such as nutrient lossand single function existing in traditional processng techniques,this paper deeply analyzes the technological innovation paths such as raw material inovationand nutritional function enhancement,and proposes methods such as improving oil crops based on gene editing technologyand precisely regulating metabolic functions through probioticgrainco-fermentation.Meanwhile,analyze its future development direction to provide theoretical and technical references forbuildinga healthy grain,oil and fod system“from farm to table,andoptimize the dietary structureof the nation.
