Abstract: The analysis of different arsenic forms in food is of great significance for food safety monitoring and can provide strong support for safeguarding public health. Based on this, this article systematically reviews the main extraction methods of arsenic compounds in food in recent years, including hot extraction, auxiliary extraction, enzymatic hydrolysis, etc., and compares and analyzes the characteristics of various methods. At the same time, the application of different detection techniques in the determination of arsenic forms in food is explored, in order to provide reference for future research and practice in related fields.
