Abstract: Food is the material basis for human survival, and its safety level is directly related to the health and life safety of residents. Even if lead, mercury, cadmium, arsenic and other heavy metals exist in food, the long-term intake will accumulate in the human body, endangering the health of neurological, immune, reproductive and other systems. In recent years, food safety incidents caused by excessive heavy metals have emerged, which have aroused wide attention from all sectors of society, and the importance of heavy metal detection in food has become more prominent. This paper focuses on the quality control and analysis of heavy metal detection in food, and discusses the relevant key points from various aspects, aiming to improve food reliability and accuracy of heavy metal detection results in medium.
