基于PCR技术快速检测食品中的常见致病菌

Abstract: Objective: To establish a method based on polymerase chain reaction (PCR) to quickly and accurately detect common pathogens in food. Method: Escherichia coli O157:H7, Staphylococcus aureus and Listeria monocytogenes were selected as target pathogens, and primers were designed for their specific genes. The simulated contaminated food samples were tested and compared with the traditional culture detection method. Result: The PCR method can specifically amplify the target pathogen genes with a sensitivity of up to 102CFU⋅mL-1 , and the detection time is shortened from 3 to 5 days of the traditional method to 6 to 8 hours. Conclusion: In actual food testing, the PCR method has a higher compliance rate than the traditional method, which provides effective technical support for the rapid detection of food microbial safety.
