Abstract: With the improvement of living standards, people’s attention to food quality and safety has also increased. Microbial contamination is a key factor affecting food quality, which can easily lead to a series of problems such as food spoilage and foodborne diseases. This article focuses on microbial contamination sources in food quality control, analyzes the common types and hazards of microbial contamination sources in food, and explores their identification methods and prevention and control measures, in order to provide theoretical reference and practical guidance for improving the efficiency of microbial contamination source identification and prevention and control.
