Abstract: Food microbial toxins,as toxic secondary metabolites produced by microbial metabolism, pose a serious threat to food safety.This articleelucidates thedefinition,clasification,common types,and hazardsof microbial toxins,analyzes theircontaminationpathwaysand distributioncharacteristicsinfood,dissects the prnciples and applications of traditional chemical detection methods and modern rapid chemical detection technologies, discusses the shortcomings of existing techniques in terms of sensitivity,specificity,and time consumption,and proposes coresponding optimization strategies.This research can provide technical references for improving the detection level of food microbial toxins and ensuring food safety.
