Abstract: With the increasingly serious problem of food adulteration, traditional detection methods are facing limitations such as complex operation and long cycle. Infrared spectroscopy technology, with its advantages such as non-destructivenesshigh-speed response and simultaneous detection of multiple components, has become an important means for identifying food adulteration. This article expounds the main types of food adulteration phenomena,the dificulties in detection,and the limitations of traditional detection methods.It explores the application principle and method construction of infrared spectroscopy technology in food adulteration identification, analyzes the typical applications and implementation efects of infrared spectroscopy technology in food adulteration identification, aiming to achieve rapid, convenient and non-destructive adulteration identification.
