Abstract: This paper focuses on the impact of the preparation process of freeze-dried coffee powder on product quality.The characteristicsand preparation processoffreeze-driedcoee powderare introduced,the influenceofraw material selection,pretreatment, freezing,sublimation drying and other links on product quality is analyzed in detail. Strategies such as optimizing raw material screening, improving pretreatment process,and accurately controlling frezing and drying parameters are proposed to improve the quality of freeze-dried coffee powder products and promote the high-quality development of the freeze-dried coffee industry.
