高光谱技术在肉类新鲜度检测中的研究进展
Abstract: The freshness of meat is an important guarantee for food safety,but traditional detection methods are diffcult to meet the current market’s demand for extensive screeningand rapid testing.Hyperspectral detection technology has advantages such as high speed, non-destructive performance, and large information volume. Compared with traditional detection methods,it can significantly improve detection eficiency and accuracy.This article sortsout thebasic principles,development history,applicationmethods andalgorithmmodels ofhyperspectral technologyapplied to meat freshness detection,analyzes the current challngessuchas high instrumentcost,complex data processng and sensitive detection conditions,and explores the solutions for future technological upgrades.
