Abstract: Food safety issues in Chinese cuisine cooking mainly stem from non-standard raw material procurement and storage,improper cooking operations, weak food safety awareness among practitioners,and lax control of the cooking environment.These factors are interrelated and work together,creating potential safety hazards in the process of Chinese cuisine preparation. If not controlled, they willdirectly afect the qualityoffood and the health ofconsumers.To this end,itissuggestedthatsystematic measures be taken fromaspects such as strengthening whole-process raw material management,standardizing cooking operations standards,enhancing the food safety awarenesof practitioners,and strict enhancing the food safety awareness of practitioners,to build acomprehensive and efficient food safety prevention and control system.
