Abstract: This paper focuses on the application of Polymerase Chain Reaction (PCR) in bacterial detection of dairy products,briefly summarizes its application in the detection of different bacterial groups such as pathogenic bacteria,spoilage bacteria,and fermentative bacteria,and puts forwardsuggestions for promoting theapplication of PCR technologyinbacterial detectionof dairy products,such as technological innovation,standardization construction,talentcultivation,andthe combined use of multiple technologies,with the aimof providing technical support for the quality and safety control of dairy products.
