食品中重金属污染的风险评估及其检测技术

Abstract： With the continuous deepening of industrialization and urbanization， the problem of heavy metal pollution in food has become increasingly prominent and has become a focus of attention fromallsectors of society. Heavy metals represented by lead，mercury，andcadmium are extremelyharmful due to their high toxicity，dificulty indegradation，and bioaccumulation.Afterentering the human body through the food chain，these heavy metals accumulate continuously，seriously damaging the nervous system，immune system，reproductive system， etc.，and may even cause major diseases such as cancer. This article takes food heavy metal pollution as the research object， focusing on discussing the risk assessment of heavy metal pollution and the application points of its detection technology，aiming to provide asistance for the effective prevention and control offood heavy metal polution and offer theoretical references and technical suggestions forthe healthy development of China's food safety supervision cause.
