Abstract: Objective: To understand the status of heavy metal pollution in commercially available vegetables in Ganzhou urban area and assess the health risksofheavy metal intake by residents when consuming Vegetables. Method:From2023 to2024,126 samplesof21kinds of vegetables were collcted fromlarge-scale farmers'markets and supermarkets in the urban area of Ganzhou. The contents of lead (Pb⋅ ), cadmium (Cd),mercury (Hg) ),arsenic (As)and chromium (Cr) elements in the vegetable samples were determined by inductively coupled plasma mass spectrometry.The heavy metal contamination status of vegetables was evaluated in accordance with the National FoodSafety StandardMaximum LevelsofContaminants inFoods (GB2762—2022)andthesingle-factor polution index method.The health risks of heavy metal intake from vegetables in diferent age groups were assessed by the Target Hazard Quotient (THQ) method. Result: The average contents of Pb, Cd,Hg, As, and Cr in vegetables did not exceed the standard.The detection rate was high,and the polution grades ofheavy metals were allinan excellent state.The THQvalue indicates that Cr hasthe highest risk and Hg has the lowest risk.Leguminous vegetables have the highest risk,while brassica vegetables havethe lowest.Children havethe highest healthrisk,butthe total target hazard quotient values of allage groups are less than 1. Conclusion: From 2023 to 2024,the contents of Pb, Cd,Hg, As, and Cr in commercially available vegetables in Ganzhou urban area did not exceed the safety standards. The health risk of consuming heavy metals from vegetables to the human body is relatively low.
