Abstract: As an essential component of daily diet, the quality and safety of edible vegetable oils during storage directly affect human healthand nutrient intake.This paper analyzes the oxidative rancidity,microbial contamination, loss of nutrients,and other potential risks faced byedible vegetable oils during storage.It explores thecauses of these issues from the dimensions of storage conditions,container selection,andregulatory mechanisms,and proposes targeted solutions such as optimizing the storage environment,scientifically selecting container materials,and improving the quality detection system.The aim is to provide theoretical references for ensuring the safe storage of edible vegetable oils.
