Abstract: This study aims to effectively encapsulate and deliver the functional bioactive compound resveratrol using acomposite nanoparticle system composed of zein and pectin as dual cariers.Nanocarrers were prepared with varying massoncentrationsofpectinandtheirparticlesize,polydispersityindex (PD),Zeta potential,encapslation effciency,loadingcapacity,photo/thermal stabilityandreleasebehaviorundersimulatedgastrontestinalconditions were systematically investigated. Experimental results showed that the incorporation of pectin significantly enhanced the stability and encapsulation efciency of resveratrol-loaded nanoparticles.When the mass ratio of zein to pectin was 100:35 ,the encapsulation efficiency and loading capacity reached their maximum values of (204号 83.89% and 15.25% ,respectively. In addition, the composite nanoparticles exhibited excellent protective effects on resveratrolwhen exposed to lightandheat,and demonstratedasustained and controlled release profile insimulated gastrointestinal environments.
