Abstract： This paper analyzes the reasons for the deviation of heavy metal detection results in food from aspects such assamples，instruments andequipment，tsting personnel and testing environment，and proposes control measures such as standardizing the sample collection and preservation process，strengthening the management and mainteanceof instrumentsandequipment，eancingthetrainngof testingpersoel，andstrictlycontrollngtheloator testing environment， aiming to improve the accuracy of detection results and build a food safety defense line.
