Abstract： Rapid detection technologies playa vital role in the detection of heavy metal polution in food.This paper systematically analyzes the sources and hazards of heavy metals in food，and reviews the principles of rapid detection technologies such as spectral detection technology， electrochemical detection technology，and biological detection technology，as wellas theirapplications in thedetection ofheavy metal pollution in fod，with theaimof providing technical support and practical references for the detection of heavy metal polltion in food.
