Abstract: Objective: To investigate and analyze an acute food poisoning incident caused by the misuse of nitrite inarestaurantinQingjiangpu district,Huai'ancity,toprovideabasis forthepreventionandcontrolofnitritefood poisoning. Method: Seven patients with food poisoning were questioned and questionnaires were filled outby on-site epidemiological investigation.The nitrite content ofthe samples collcted on-site was detected by spectrophotometry inaccordancewiththeNationalFoodSafetyStandard-DeterminationofNitriteandNitrate inFoods (GB5009.33- 2016).Result: High concentrations of nitrite were detected in the suspected white powder seasoning,with a content of 1.0×106mg⋅kg-1 .Based on the clinical symptoms of 7 patients with food poisoning and the nitrite test results of 18 related samples,itis speculated thatthechefofthisrestaurant mistakenlyused nitrite powderas table salt when making unch on May 31,2024, which led to acute food poisoning in the patients.Conclusion: Relevant departments need to strengthen supervision and management of restaurants,strictly control the usage and flow of nitrite,and prevent the occurrence of such food poisoning incidents.
