电化学传感器检测食品中日落黄的研究进展

Abstract： Sunset yellw is a commonly used synthetic food colorant， but excessive intake may pose potential health risks.Inrecent years，with increasing public concern about food safety，electrochemical sensors have been widely applied to detect sunset yellow in food due to their rapid response，high sensitivityand low cost.This paper introduces the basic principles and classifications of electrochemical sensors，reviews the research progress of electrocemical sensors in the detection of sunset yelow， explores the applications ofvarious types of electrochemical sensors for sunset yellow detection，analyzes the advantages and disadvantages of electrochemical sensors in food additive detection，and discusses future development trends.This work provides theoretical reference for the subsequent application of electrochemical sensors in the detection of sunset yellow.
