Abstract: This paper explored the efects of different irrdiation doses of X-rays on the germination, morphological structure and physiological activityof Aspergillus flavus spores,and applied it to the bactericidal treatmentof Aspergillus flavus spores in peanuts to clarify its bactericidal effect.The results show thatthe X-ray irradiation dose is positivelycorelated with the bactericidal effectof Aspergillus flavus spores.Whenthe iradiation dose reaches 2.0 kGy, Aspergillus flavus spores can be completely killed. Observation by Scanning Electron Microscope (SEM) revealed that after iradiation with Aspergillus flavus,the spore surface showed varying degrees of shrinkage and collapse.The degree of damage intensified with the increase of irrdiation dose,presenting asignificant dose-dependent pattern. The nucleic acid content (OD260) )and proteincontent (OD280) )ofaflatoxinsporestreated with X-ray iradiation decreased with the increase of irradiation dose.The peanut substrate experiment showed that 10.0 kGy irradiation could completely inhibit the growth of Aspergillus flavus in peanuts.In conclusion, X-ray irradiation achieves sterilization by destroying the structure of Aspergillus flavus spores and degrading nucleic acids and proteins,and itssterilization effect is dose-dependent.This research provides theoretical support for the application of X-ray irradiation technology in the food field.
