Abstract: Taking walnut oil as the raw material and light transmittance,peroxide value,acid value,p-anisamine value and fattyacidcompositionas the investigation indicators,theinfuenceof different packagingontheoxidation stability of walnut oil was studied.The resultsshow that,from the perspective of glass botle processing,theoriginal color glass is more suitable for storing walnut oil than the spray-colored glas.Judging from the color of the glass botles,green,brownand blue glassbottles can effectively prevent theoxidation of walnutoil.In terms of material, glass botlesare more suitable for storing walnutoil than ironcans.Fromthis,itcan be knownthat walnutoil is more suitable for storage in natural color glass bottles of brown, green and blue.
