食品微生物污染源及其控制措施研究
Research on Food Microbial Contamination Sources and Their Control Measures

Abstract: This article systematically sorts out the core sources of food microbial contamination,such as raw material links (soil, water sources,carredbyanimalsand plants),processing links (equipment cross contamation, personnel operation polution), storage and circulation links (temperature and humidity loss control, packaging damage),and consumption links (improper handling),and proposes control measures from three dimensions: source control,process blockage,and end guarantee,in order to effctivelyenhance the control level offood microbial contamination and provide a more solid guarantee for public health.
