Abstract:To promote thestandardizedandnormativedevelopmentof the Zhanjiangcuisine industry,Zhanjiang has implemented the“Guangdong cuisine master”project by establishing a comprehensive standards system for Zhanjiang cuisine.Through the selectionofspecialized technical institutions,the Standards System Planand Roadmap for Zhanjiang Cuisine (2021-2O24)wasformulatedandjointlyreleasedbymultipledepartments.Thisdocumentestablishedstandardization objectives and standardssystemstructure encompasing brand culture,ingredients,cooking techniques,dishes,nutrition andservices.Adoptinga“government-industry-academia-researchapplication”colaborativemodel,Zhanjiangdeveloped 6local standards and12associationstandards for Zhanjiang cuisine.Pilot verification confirmed that thestandards system significantlynhanceddishqualityandindustrialproficiency,facilitatedthepreservationofclassical Zhanjangdshesand culinary techniques,and accelerated brand developmentalongsidecultural-tourism integration.Future eforts—including standards disemination,talentcultivation,anddynamicupdates—willfurther drive thehigh-qualitydevelopmentof the Zhanjiang cuisine industry, providing areplicable model for standardizing other regional culinary systems.
