Abstract:Morchella esculenta polysaccharides are one of the main active substances in Morchella esculenta. They possess diverse biological activities, includingantioxidant, hypoglycemic,and immunomodulatory properties, and have therefore atracted widespread atention in the food and pharmaceutical fields.The complex and diverse structural characteristics of polysacharides underlie their biological activities.Therefore,in-depth research on the molecular structure of Morchell esculenta polysaccharides and the use of molecular modification techniques to improve their biological activitiesare crucial for unlocking their potential for practical applications.This article reviews the main biological activities and mechanisms ofactionofMorchella esculenta polysaccharides and explores the research progress on the efects of several common structural modification methods on their biological activities, aiming to provide a reference for the further development and utilization of Morchella esculenta polysaccharides.
