Abstract: This paper summarizes the application of 1-methylcyclopropene (1-MCP) by researchers at home and abroad inrecent years,mainly focusing on the efects of1-MCP treatment on the respiration,ethylene release, post-ripening softening,and flavor substances of fruits and vegetables.Insummary, it was found that 1-MCP had a good effect on maintaining the hardness,color and sugar content of fruits and vegetables,and had an inhibitory effect on the material losscaused by respiration and overipe aging caused by ethylene,and had a positive effect on reducing post-harvest physiological diseases of fruits and vegetables.This study has important guiding significance for promoting the healthy development of the fruit and vegetable industry.
