Analysis ofFood Safety Issues and Control Strategies in the Food Processing and Preparation Stage of University Canteens

Abstract: To enhance the food safety management level of university canteens and contribute to the establishment ofa campus food safety guaranteesystem, this paper analyzes the problems existing in the processing and meal preparation links of university canteens,such as improper management of food raw material procurement and storage, non-standard processng procedures,incomplete cleaning and disinfection of tableware,and weak food safety awareness of employees,and proposes targeted control strategies including standardizing raw material procurement and storage,strengthening procesing supervision,enhancing tableware disinfection management,and improving practitioners’ quality.
