Abstract: By optimizing the chromatographic conditions of the national standard detection method,this study established acapilary gas chromatography method forthe determination of the mass concentrations of ethyl acetate, ethyl caproate and ethyl lactate inLaobaigan Baijiu.The results showed that the chromatographic separationof the threesterflavor substances was good,andthe linear relationshipwas god withintheir respective mass concentration ranges.The method had low detection limits and quantitative limits,high sensitivity,relative standard deviations of 1.07% to 2.22% ,and spiked recoveries of 94.3% to 101.2% ,which could meet the quantitative detection needs of the three ester flavor substances in Laobaigan Baijiu.
