Abstract： Heavy metals in food mainly enter the food system through environmental pollution or food processing equipment，and long-term intake may cause a series of health risks such as neurotoxicity and reproductive toxicity. This paper systematically analyzes the source distribution and health hazard mechanism of typical heavy metal elements in food，and focuses on the application statusand key technical points of spectroscopic analysis， electrochemicalanalysis，biosensing technology and nanomaterial-asisted technology in the rapid detectionof heavy metals，aiming toprovide technical supportand theoretical basis for food testing laboratories to formulate efficient and accurate heavy metal detection solutions.
