Abstract: To understand the influence of diferent extraction methods on the quality of pecan oil, n-hexane extraction method, cold pressing method, supercritical carbon dioxide ( (CO2 )extraction method and aqueous extraction method areused to extract pecan oil,and the physicochemical characters,fattyacid compositions and tocopherol contents of extracted pecan oils are compared and analyzed.Theresults show that the n-hexane extraction method has the highest oil extraction rate (73.36%) ,with the lowest saponification and iodine values,and the highest tocopherol content (314.73mg.kg-1) ). The oil extracted by cold pressing method has the lowest degree of oxidation and relatively lower tocopherol content. The oil extracted by supercritical CO2 extraction method has the highest monounsaturated fatyacid content and the highest proportion of unsaturated fatty acids,and is relatively easier to oxidize.The tocopherol content,saponification value and iodinevalue in the oil extractedby the water extraction method are relatively high, but the oil extraction rate is low (less than 50% )
